Thai Fried Rice With Shrimp

Works well with Tofu instead of shrimp. Canned diced tomatoes can be used instead of a fresh tomato. You might find that 1/2 cup of rice is too little as this has a very light taste and doesn't fill you up.

Ingredients

  • 1/2 cup White Jasmine Rice
  • 1/2 White Onion
  • 1 Egg
  • 1 Scallion
  • 1/4 Red Pepper
  • 1/4 cup Cilantro
  • 1/2 med Tomato
  • 1 lg Clove Garlic (1/4 tsp)
  • 6 Large Shrimp
  • 1/2 tsp Thai Red Curry Paste
  • 1/2 tsp Roasted Red Chili Paste
  • 1 tsp Fish Sauce
  • Pinch Ground Black Pepper
  • 1/4 Lime

Directions

  1. Rinse and cook rice in 1 cups water. Set aside when done.
  2. Slice vegetables and set aside.
  3. When Rice is done, heat Wok, add 2 Tbsp Olive Oil. Add Crushed Garlic, cook briefly – 10 seconds.
  4. Add egg and scramble.
  5. Add Onion, Red Pepper and Tomato. Cook until wilted.
  6. Add Rice, Shrimp, Fish Sauce, Roasted Chili and Thai Red Curry Paste. Cook until rice is blended with ingredients and not sticking together. Add ground pepper to taste.
  7. Garnish plates lime wedges & Cilantro.
