Thai Curried Shrimp

This recipe is inspired by Thai-Style Red Durry with Shrimp, Bell Pepper, and Snap Peas recipe in The Complete Cooking for Two cookbook by America's Test Kitchen.

Ingredients

  • 1 tsp Olive Oil
  • 1 tsp Red Curry Paste
  • 1/2 tsp Fish Sauce
  • 1 tsp Brown Sugar
  • 1/4 cup Chicken Stock
  • 1/2 cup Coconut Milk
  • 1/ 2 Red Pepper Sliced
  • 2 oz Snow Peas
  • 4 oz Shrimp
  • 1/3 cup Fresh Basil
  • 1/2 Lime
  • 1/3 cup Rice

Directions

  1. Prepare Rice.
  2. Slice Red Peppers, thaw and shell shrimp and wait until Rice has about 10 minute left to avoid overcooking the vegetables.
  3. Combine first 6 ingredients in Wok and bring to a simmer.
  4. Add Sliced Red Peppers and Snow Peas, simmer 5 mins
  5. Stir in Shrimp and simmer until done, about 3-4 minutes
  6. Add Basil and lime juice, serve over rice.
