Vindaloo Chicken with Rice

Ingredients

  • 2 tbsp Vindaloo Paste
  • 1 tbsp oil
  • 1 1/ 2 tbsp vinegar
  • 1/4 chopped onion
  • 1 chicken breast
  • 1/4 tsp salt
  • 1/4 cup water
  • 1/3 cup Jasmine Rice
  • Vindaloo Paste
  • 1 tbsp vindaloo spice mix
  • 1 tbsp water
  • 1 tbsp oil

Directions

  1. Make the vindaloo paste by mixing the spice mix, water and oil and set aside.
  2. Chop onion and set aside.
  3. Chop the chicken into 1” chunks and set aside.
  4. Heat 1 tbsp oil in the wok, when hot brown the chicken.
  5. Add and brown the chopped onion.
  6. Add vindaloo paste, vinegar, salt and water. Reduce heat and simmer.
  7. Prepare 1/3 cup rice.
  8. When the sauce has thickened, serve with the rice.

Sources

Try making this with Aloo Phujia to serve 2-3 instead of doubling the recipe. Or you can add potatoes to the Vindaloo and double the amount of Vindaloo paste, water and vinegar in the recipe.
