Ingredients

  • 1 tbsp Olive Oil
  • 1/2 medium Onion
  • 1/4 tsp Chili Powder
  • 1 tsp Ginger
  • 1/2 tsp Garlic
  • 1 cup diced Tomatoes
  • 1/3 cup Lentils
  • 1/4 cup canned Kidney Beans
  • 3/4 cup Water
  • 1/2 cup Coconut Milk

Directions

  1. Heat 1 tbsp Olive Oil in a heavy pot of dutch oven.
  2. Sautee the onion and garlic until softened
  3. Add remaining ingredients and simmer covered 20 minutes.
  4. Remove cover and simmer an additional 15 minutes until liquid has evaporated and lentils are cooked.
