Thai Curried Shrimp
This recipe is inspired by Thai-Style Red Durry with Shrimp, Bell Pepper, and Snap Peas recipe in The Complete Cooking for Two cookbook by America's Test Kitchen.

Ingredients
- 1 tsp Olive Oil
- 1 tsp Red Curry Paste
- 1/2 tsp Fish Sauce
- 1 tsp Brown Sugar
- 1/4 cup Chicken Stock
- 1/2 cup Coconut Milk
- 1/ 2 Red Pepper Sliced
- 2 oz Snow Peas
- 4 oz Shrimp
- 1/3 cup Fresh Basil
- 1/2 Lime
- 1/3 cup Rice
Directions
- Prepare Rice.
- Slice Red Peppers, thaw and shell shrimp and wait until Rice has about 10 minute left to avoid overcooking the vegetables.
- Combine first 6 ingredients in Wok and bring to a simmer.
- Add Sliced Red Peppers and Snow Peas, simmer 5 mins
- Stir in Shrimp and simmer until done, about 3-4 minutes
- Add Basil and lime juice, serve over rice.
